    2 ounces Zacapa 23 2 dashes rhubarb bitters 1 cube turbinado or brown sugar 1 brandied cherry (sold at specialty markets) 1 1/2-inch thick slice blood orange, peel intact 1 small wedge blood orange splash of water ice

    In a rocks glass, dash bitters over sugar cube, add cherry and blood orange slice to it, then muddle. Add enough ice to nearly fill the glass. Add the rum. Top with a splash of water and garnish with a blood orange wedge.

    Half fill a cocktail shaker or heavy glass tumbler with ice. Add ingredients. Stir, do not shake, and strain into a cocktail (martini) glass. Garnish with a fresh, pitted, stemless bing cherry.
