The joke has a double meaning, referring to both the fancy - and generally expensive - seafood dish (playing off Zoidberg's crustacean background), and the affluent Rockefeller name. Oil tycoon and real estate mogul John D. Rockefeller's fortune at the time of his death accounted for 1.5% of the entire U.S. economy, making him the richest man in U.S. history. (Incidentally, "Oysters Rockefeller" are so named after the same John D. Rockefeller, because the sauce was so "rich".)
