When General Burkhalter is questioning Dr Lechay, the 5 POWs are in Hogan's room listening via the coffee pot speaker. After Burkhalter threatens to hand her over to the Gestapo, Newkirk and Carter are no longer in Hogan's room.
Update: While Newkirk and Carter do seem to 'disappear' from Hogan's room, there is sufficient time between the cuts to views of Hogan's room for them to have left. The fact that no order/request for them to leave is made by Hogan is irrelevant - they are not important to the action going on in either Klink's or Hogan's office.

When Schultz calls for a lunch break at the farm, based on the shadows, it is either early in the morning or late in the afternoon - at any rate, nowhere near midday.
The Gestapo Captain was taken prisoner by the prisoners, but nothing was said as to what happened to him after he was put in the back of the truck.
UPDATE: This is not a goof. As the Heroes are driving away from the facility, careful viewers will note that Newkirk throws him out of the back of the truck.

When Hogan and crew arrive at the lab in a commandeered German truck, the engine's hood should be warm to the touch. Yet, "snow" is still on the hood.
Crickets are heard chirping when the truck gets to the lab, but this is supposedly winter in Germany, and the crickets should not be heard.
In several scenes, including the ones in Klink's office, there are heavy shadows showing below and to the left of some individuals. These are shadows from the production lighting, which is apparently above and to the right of the camera.
Regarding the doctor's first name. in one instance, the closed captioning text says 'Suzette' when the speaker says 'Suzanne'.
The filing cabinets seen in the laboratory room are 1960-style American-style cabinets, not 1940-style German cabinets.
In several scenes in Klink's office, production lights are seen reflected in Klink's monocle.
While at the lab in a German uniform, Carter has his gloves off. Carter is not married yet he is clearly wearing a wedding ring.
In one of the scenes, she is introduced as Dr. Suzanne Lechay; in the credits, she is listed as Suzette Lechay. In Klink's office she even says her name is Suzanne Lechay.
