The nameplate change on Klink's office door is not a goof. It is changed to "Privat" before the ruse by the Heroes, and is changed back afterward. There is no continuity issue.
When Carter dresses like Hitler and takes over Klink's Office to trick a spy into giving Hogan his contact's name, they show Klink's office door (which is supposed to be Hitler's office) and it still has Col. Wilhelm Klink's nameplate on it. They pan to Hogan and Newkirk and then back to Carter in his Hitler getup and the door suddenly has just "Privat." At the end, when Schultz sees Carter as Hitler, the door again has Klink's nameplate.

However, in the full version of the episode, at the very beginning of the denouement, Hogan is seen with a screwdriver just finishing up screwing in one of the screws on Klink's nameplate. Hogan takes Lt. Miller to his office to listen to the coffee pot/listening device almost as soon as he arrived. In the past, Hogan would verify the identity of the new arrival before he gives away details of the operation in the camp. Update: Lt. Miller provides the correct outfit (504th Bomb Group), Operations Officer (Lt. Col. Pruitt), and the code ("Bluejay"). This kind of information would be provided to Hogan regularly so captured prisoners could be verified.
The truck has the steering wheel on the right. Normally in Germany, the steering wheel would be on the left.
Hogan and his heroes are shown hanging their wet clothes to dry out in the cold weather. There is snow on the ground so it must be Winter. Their clothes would not dry but would freeze hanging them in the cold weather.
In the scenes in the hotel room, there are heavy shadows on the wall from two directions. These are shadows from the production lights.
During much of the first interaction between Klink and Martin/Strasser, there are stage lights reflecting off Klink's monocle.
At the meeting in the hotel room, Hogan plays the part of Strasser. Herr Schneer indicates that Strasser lost the tip of one of his thumbs during a hunting accident. Strasser's right thumb was quite visible during his interaction with Klink in Klink's office, and did not look like the tip had been lost. Later, as Strasser exits the cooler to get on the truck (with Hogan playing Mayerink), his left thumb is visible as he walks through the outer gate. As Strasser is about to get into the truck, Hogan asks which thumb was injured, and Strasser indicates it was his left. While Strasser and Hogan are in the truck drinking coffee, the tip of Strasser's left thumb is visible, but does not look like it is missing. It is possible that the fingertip was surgically repaired, but the techniques for doing so were not widely published until 1947 in the Journal of the American Medical Association (JAMA), and there is no indication that it was a recent hunting accident.
When Carter is putting on his "Hitler mustache" to finish his disguise, he is wearing a wedding ring. (First, Carter is not married. And, Hitler was not married until "the bitter end" in late April 1945.) BTW, unlike a previous installment, Carter has his hair parted properly this time. (Hitler parted his hair on his right side.)

When Lt. Miller and Maj. Martin arrived, there were two additional prisoners that arrived in the truck with them. All four would have been taken to Klink's office for interrogation and the normal lecture about Stalag 13. Only Maj. Martin/Hans Strasser was taken to Klink's office.
When in the Gestapo uniform outside of the office, Newkirk is speaking with a German accent, but some of the British accent is still heard.
