The overconfident chef

The story of this restaurant is pretty simple. The chef liked his grandma's recipes. But he doesn't have any practical experience so he can't pull them off in the kitchen. As a result his cooking isn't very good and people don't like the food.

To make matters worse, at the beginning of the episode he doesn't properly cook the chicken. Some people literally ate bloody chicken. That's pretty awful and could get someone sent to the hospital or worse.

There isn't a ton of drama in this particular episode. The chef is overconfident but not arrogant. The rest of the staff are all nice enough people. The only real question on my kind as I watched it was whether the restaurant would survive for a year after Ramsey left.

Dirty kitchen, undercooked food

The initial visit shows a confused kitchen without leadership or direction. The Chef cooks everything from memory, none of his Mother's recipes are written down. Nobody can cook except him.

Chef is off his game, because he is burned out. Some of the chicken goes out raw on the inside. Customers are returning bloody chicken, which is a major risk for Salmonella.

The Chef's sister is the co-owner, and she and her brother opened the restaurant in honor of their Mother. That went by the wayside fast, because neither of them has any restaurant hygiene, service, or cooking experience.

They are both nice people, but they never hired anyone that had any experience. They ran out of money when their restaurant was closed for months due to Covid. Now they are broke and barely surviving.

After they lost their money, and hope, their standards went to zero. The sister invested her life savings and her pension, and now it is all gone. Ramsay arrives to do the inspirational talks, but talk cannot pay the bills. Ramsay does not look that excited, even though he tries hard to fake it.

The owners look like they are just there for the free remodeling (so they can sell it and go). The owners gave up pretty quickly, long before Ramsay arrived. I think they had underestimated how much money they needed to survive for the first year or two. They probably should never have opened a restaurant, which is often true in cases where people buy a restaurant without any restaurant experience.

The restaurant was dead when Ramsay got there. Now that it has been revived and remodeled by Ramsay, I am betting the owners will sell it very soon. Neither one of them looks like they love running a restaurant anymore. Their dreams were crushed by economics. Ramsay cannot put that fire back into them.
