This was a frustrating episode because of how it ends.
The main bulk of this episode is a woman and a man co-own a restaurant. She has taken on debt to keep it afloat. He has taken a 70k salary. The guy, also the chef, keeps making food that gets sent back and he's slow. This is of course making customers irrate and hungry, so it's hurting the restaurant.
About halfway through the episode the chef gets forced out. Great. Chef Ramsey brings in a few experts to carry the kitchen until new people are hired. Sounds good, right? Nope. She just hires back the same mediocre chef as before. Basically the restaurant is doomed.
