I know this series is now in reruns. However, I'm new to this show. I've only watched a couple episodes. After seeing this one 'farm style brunch', I'll give it another try. I hope the series improves....

Chef Jeff talks about eating healthy natural whole foods. However, in this particular episode, he has the potato hash swimming, I mean cooking in a pool of oil/grease.

Why? All that oil/grease is not healthy to eat. It can't be. If you are frying bacon in a cast iron skillet, you don't need to add oil to it first. Bacon renders a lot of fat. Even the egg is covered in oil. I thought the whole purpose of a non-stick pan is so you don't need to use oils and fats.

I make delicious fried potatoes in a cast iron skillet. If you are using a cast iron skillet, you don't need to add any oil to it first. Just make sure the skillet is hot before you add the bacon. The bacon will render its own fats. If your skillet is seasoned properly, the bacon won't stick.

I don't cook with all that grease. I can't due to health reasons. I cook the bacon completely, remove it, and drain most of the fat. You can always add more fat/oil if necessary, but I usually don't have to.

It's plain and simple really. It's not healthy Or necessary to cook with all that oil/fat. If it was, why did they develop 'Non-Stick' pans? To be healthy!
