At 38 minutes, Sue discusses what tempering chocolate does "to the sugar crystals of the cocoa butter" - however it's actually the fat crystals of the cocoa butter that restructure in the chocolate tempering process. Cocoa butter can form 6 different crystal structures which is why it sometimes looks matte and a little white or ashy and it can also look glassy and dark. The second is what is called "in temper."
