Eileen and Harvey meet in a deli and Harvey orders kishka. When Eileen asks what kishka is, Harvey laughs and says, "you don't want to know." Kishka (also known as kishke or stuffed derma) is a type of sausage made from a combination of meat and grains, usually stuffed back into the animal's own intestines. Variations on the dish are popular across Russia, Poland, and Eastern Europe, but in the United States it is mostly known as a Jewish dish, popularized by Ashkenazic immigrants from those countries to America. The fact that Harvey orders kishka is supposed to be understood by the viewer as an indication that he is Jewish, and the fact that Eileen has to ask what kishka is (along with her rejection of matzah balls in her chicken soup) is an indication that she is not.
