Jamie applies ink with a baren in one hand and then with another in the other hand. In reality a printer would use both at once in order to speed up the inking.
Claire tells Jamie that she went to medical school in the 20th century. He asks her if she's now a doctor, and she replies that she's a surgeon, implying that she's highly skilled. However, Jamie would have been unimpressed by the term "surgeon," because until the late 19th century, surgeons did not go to medical school and were considered considerably less prestigious than physicians, who had "proper" medical degrees.
