Ah Sahm kills one of the outlaws in the saloon by jumping on him in slow-motion with a twist at the end after landing. This is an obvious nod to the way that Bruce Lee kills O'Hara after he's attacked by him with broken bottles in the movie "Enter the Dragon".
As well as serving as arguably the biggest departure from the core settings of the story, this episode also makes the biggest allusions to the original Kung Fu (1972) TV show this far (of which this series is an indirect derivation but much more similar to Bruce Lee's vision), which was very much the "martial arts guy against the cowboys with guns" kind of show.
