Responding to a call for help, Curtis cruises over to the California Highway Patrol to surprise an unsuspecting patrolman. Officer Omar has sent Curtis a tape requesting his culinary expertise to cook a going away meal for the division's cherished leader and mentor, Captain Sutherland. Omar is taken completely by surprise when Curtis casually walks in on a CHP training session and offers to help say farewell to the captain in style. The officers send Curtis to a secluded lot nearby to get a head start on the big surprise meal. Omar joins Curtis to give a helping hand and learn a thing or two about cooking. He attempts to learn his way around the grill, but ultimately Lieutenant Omar has to call for some culinary back up! Additional officers arrive to lend their help and assist Curtis in cooking some prime rib over an open rotisserie along with grilling shrimp skewers. As time runs short, Curtis and the guys rush back to the office - sirens and all - to knock the socks off of Captain Sutherland! She is greeted with a hearty "surprise" right before the entire division digs in to the roast beef sandwiches topped with arugula, tomatoes, and horseradish sauce. In addition, there are rosemary-skewered shrimps and a homemade dessert - both the rhubarb ice cream and the cones. For a job well done Curtis is given a warm round of applause and made an honorary member of the CHP!

In New Orleans Curtis decides to peruse a local farmers market. When Nick sees the Take Home Chef standing in front of him, he drops the huge watermelon he'd been holding. The two share a laugh at the fruity fumble and then agree to cook a wonderful dinner for Nick and his fiancée, Stefanie. The couple was planning to wed at the time Hurricane Katrina stuck, so they had to reluctantly put their plans on hold. Before Nick and Curtis cruise the Mississippi River, Curtis discusses a menu of tomato consommé, barbequed shrimp, and bananas foster. After arriving on the other side, Nick takes Curtis on a tour of Mardi Gras World, the year-round home of all Mardi Gras floats. Curtis turns the warehouse into a kitchen as he sets up shop to cook amidst the sea of parade floats. Meanwhile, Nick devises a plot to get Stefanie to drop by. Expecting to give Nick's car a jumpstart, she arrives and is surprised to see Curtis and crew. Finally, the couple enjoys a parade of delicious food that delights the taste buds and honors Nick and Stefanie's perseverance.
