This episode is a perfect representation of this show at its best. The premise of the episode -- Bill dating Ann Richards and Peggy trying to use charcoal instead of propane to grill when Hank is away -- is hilarious enough, but the one-liners throughout (particularly from Dale) are killer. Ann Richards herself is her usual charming and fun self, but Ellen Barkin as Bill's ex-wife is spooky perfect white trash. Mike Judge seems to always ensure that a balance is struck in every episode between loving Texas (which he obviously does) and giving it a tweak or two for some of its not-so-great aspects, and "Hank and the Great Glass Elevator" is a terrific example of that.
