At the time of writing this Bob's Burgers has reached its 12th season on air, and I can't say I'm not happy about it. Over it's time it has made some obvious change towards its start in order to keep its audience and stay on air. While I actually prefer the original approach seen in season 1 and 2, I recognize that without the change made the show would've lived on.
I am happy for the entire Bob's Burgers cast and crew that their show is so appreciated and beloved by audiences. It truly is one of a kind in its humor and chemistry between characters. It feels like it was supposed to be another Adult Swin adult animated show but it quickly adapted the attributes of other Fox network shows. This blend allowed Bob's Burgers to become original, by blending its awkward, conversational comedy with more mainstream humor. Ultimately this made the show more enjoyable for me as I'm a fan of both of these humors.
I highly prefer Seasons 1-6 over most things after that. Seasons 1-2 are very clearly the early stages of the show, with prolonged awkward conversations. It's character's personalities turned up to the max. And it's at times more risqué and one of a kind plots.
By mid season 3 the show started to change, with more comfortable and tuned characters and plots. Clearer animation and voice acting. And less sexual episode plots. By Season 4 the show finally found it's, finding a balance on all its aspects. The characters were at a point were they were not obnoxious but we're still able to provide comic relief and room for growth. The plots being at times incredibly awkward and at others more comfortable all the while staying original.
Season 5-9 seemed to be a refinement of what the show had become. Continuing what it had built with a consistent high quality and humor. It was Bob's Burgers at its best and perfection, it was at its peak of viewership and acclaim. The show was truly going steady.
While Seasons 10 and beyond didn't drop in quality by any means it did seem to lose some of it's momentum. The plots seemed to be masked repeats of other episodes and the characters seemed to never change and ultimately become more obnoxious even though that was the exact opposite point.
In complete, the show is great. It's original, funny, clever, and charming. I consider it worth watching, especially in order to see the change in the shows approach over time. It doesn't necessarily ever get worse or better, just different and less or more consistent. It all comes down to preference, but I believe most people will be able to enjoy this show.
